This salad is based on a recipe from my aunt, who used this salad to trick my little brother into eating his veg. The natural sweetness of the carrot is enhanced by a pinch of cinnamon.
- 500 grams of carrot
- 2 crisp apples
- juice of half a lemon
- handful of raisins (normal and light)
- pinch of cinnamon
Soak your raisins
Pour a layer of hot water on your raisins to make them extra juicy.
Grate the carrots
The easiest way is using a machine but you could grate them by hand. Grate both the carrots and the apples with the same device so the pieces are the same size.
Squeeze of lemon
Quickly add the lemon juice, this will prevent the apples from browning.
Put it all together
Mix in a small pinch of cinnamon and the raisins.
Don't worry if you end up with some leftovers, use them in this lovely carrot cake.
